Roasting potatoes and sweet potatoes with Rosemary is always great. The final result is so pretty that it will dress up any dish. You can make these year round as a side for you favorite meat, fish or chicken dish. However, these are a great side dish for Thanksgiving as well. Here is what you are going to need for this:
6 medium red potatoes, scrubbed
6 medium sweet potatoes, scrubbed
7 sprigs Rosemary
Olive oil
Salt & Pepper
Preheat oven to 425 degrees.
Cut potatoes and sweet potatoes in half
Tear the Rosemary leaves off the sprigs and scatter them onto a nlarge baking pan.
Place the potatoes and sweet potatoes, cut side down, over the Rosemary.
Drizzle with olive oil.
Season with salt & pepper.
Roast in the oven for 35 to 40 minutes.
Flip them over and serve as a side dish for lamb, pork or chicken.
