Roasting Potatoes – Rosemary Roasted Potatoes

Roasting potatoes and sweet potatoes with Rosemary is always great. The final result is so pretty that it will dress up any dish. You can make these year round as a side for you favorite meat, fish or chicken dish. However, these are a great side dish for Thanksgiving as well. Here is what you are going to need for this:

6 medium red potatoes, scrubbed
6 medium sweet potatoes, scrubbed
7 sprigs Rosemary
Olive oil
Salt & Pepper

  • Preheat oven to 425 degrees.
  • Cut potatoes and sweet potatoes in half
  • Tear the Rosemary leaves off the sprigs and scatter them onto a nlarge baking pan.
  • Place the potatoes and sweet potatoes, cut side down, over the Rosemary.
  • Drizzle with olive oil.
  • Season with salt & pepper.
  • Roast in the oven for 35 to 40 minutes.
  • Flip them over and serve as a side dish for lamb, pork or chicken.
