These pork chops have to be marinated for at least one hour before they go in the oven so it is important to take that into consideration. The marinade I am about to show you is delicious! You can use it for marinating meats before grilling them as well – steak or pork. I learned it from our good friends Martin and Carolyn Kleiner.
For the pork you are going to need the following:
6 thin pork chops
1 cup soy sauce
4 scallions, chopped white and green parts included
Wash and pat dry the pork. Place them in a bowl and cover with soy sauce and scallions. Marinate for at least one hour, flipping the meat over once so both sides marinate evenly.
Preheat the oven at 375 degrees. Place the chops on a baking pan. Discard the marinade.
Cook the pork chops for 20 to 25 minutes. Make sure they are cooked but juicy. Do not let them dry up!
For the salad you are going to need:
3 cups cooked couscous
2 tomatoes, diced
10 Kalamata olives, pitted and sliced
2 Persian cucumbers or 1 regular cucumber, cut into small pieces
3 scallions, chopped green and white parts included
8 oz. Farmers cheese or Feta cheese, cut into small cubes
1 teaspoon oregano
Olive oil and salt
Place all the ingredients in a bowl.
Mix well and season with olive oil and salt.
Serve with the pork chops and enjoy!
