Here’s a nice variation to banana bread. It is easy to make and very satisfying. Eat them at anytime – breakfast, snack or perhaps dinner and a smoothie? However you decide to eat them I am sure you will enjoy them!
You can line the muffin pans but you do not have to. I just make sure I butter them really well and save myself the liner. It is important that you not overfill the muffin pan. Fill it only 2/3’s of the way in order to prevent the muffins from overflowing. This is how they need to look:
You will be baking the muffins for about 30 minutes. They will be ready when you insert a cake tester or tooth pick in the center and it comes out clean. Make sure not to open the oven before the 30 minutes, under any circumstances so that your muffins don’t collapse. They will come out looking beautifully plump and full like this:
Enjoy with a glass of milk, some cream cheese or however your heart desires!
