Crispy Smashed Potatoes

These potatoes are so easy to make and they are delicious! You can serve them as a side dish or use baby potatoes and serve them as an appetizer with some spicy salsa. You can also make them for brunch in lieu of hash browns or country potatoes. Here is what you are going to need for these scrumptious potatoes for four people:

8 to 12 small red potatoes
Olive oil
Salt and Pepper

Wash the potatoes well and place them in a pot of salted water. Bring to a boil. Reduce the heat and simmer until completely done, about 20 minutes.

Remove the potatoes from the pan and let them cool down. Preheat the oven to 375 degrees. Place them in a greased roasting pan and squish them with the bottom of a drinking glass.

Drizzle them with olive oil and season them generously with salt and pepper. Place them in the oven and roast them for 25 to 30 minutes until they are crispy. If you are using baby potatoes they will be done faster so keep an eye on them. Serve and enjoy!!
