Grilled Corn

Grilling corn gives it that final ‘umph’ before it hits your plate! It goes very well with any grilled meat and is delicious removed from the cob and made into salad, salsa or even quesadillas. What I do is bring a large pot of water with some brown sugar to a boil. I then add the corn and let it cook for about 10 to 15 minutes.

While the corn is cooking I melt some butter in the microwave and season it generously with coarse salt and freshly ground pepper. I remove the cooked corn from the pot and place it on a baking sheet and brush it with the melted butter.

Generally, the grill is on when I grill corn because, as I said, I make it as a side for grilled meat. So I place the corn on the heated rack and lower the heat to medium.

Keep an eye on it and flip it as it gets brown.

Once it is grilled on all sides move it to an unlit side of the grill or simply remove it. The corn will be ready fast, maybe a total of 5 minutes, so cook it as the rest of your grilled food is just about ready. Serve it with extra butter and enjoy!
