Cucumber & Cotija Cheese Salad Recipe

Summer is definitely here and some days it is just too hot to fire up the stove. Here’s a very tasty and easy salad that can be served as a side or as a light meal.

2 large cucumbers, peeled and thinly sliced
1 small red bell pepper, diced
2 medium tomatoes, finely diced
1 scallion, white and green parts thinly sliced
1/2 cup crumbled Cotija or Feta cheese
1/4 cup olive oil
1/4 cup Balsamic vinegar
Salt & Pepper

Place all the vegetables in a bowl. Add the cheese. In another bowl whisk together the olive oil and balsamic vinegar. Season with salt and pepper. Drizzle on the salad and toss well to coat all the vegetables. Serve.
