OK, this recipe is so easy it will make your head spin! You do need to have red curry paste which you can find in Asian supermarkets or the Asian section in your grocery store. Red curry paste is spicy so adjust it to your taste. I am suggesting you use 1 tablespoon (I will probably use 2 because I like to sweat when I eat). If you like it milder use less paste. If you do not have tilapia go ahead and use another type of firm white fish. Serve it with turmeric vermicelli rice and enjoy it!
You will need:
4 large tilapia fillets or 8 small ones
1- 15 oz. can coconut milk
1 tablespoon red curry paste
Copped cilantro leaves for garnish
In a bowl whisk together the coconut milk with the red curry paste.
Preheat the oven to 350 degrees. Rinse and pat dry the fish. Place the fish into an oven dish. Cover with the coconut milk and place into the oven. Cook for 15 to 20 minutes, until the fish is cooked through and flaky. Remove from oven and serve with turmeric vermicelli rice. Garnish with fresh chopped cilantro.
