
To butterfly a turkey – or chicken or Cornish hen or any other bird you might want to cook – basically means to remove the backbone in order to flatten it. This is done mostly for grilling. However, I butterfly my birds many times to roast them faster. You will need a good pair of kitchen shears in order to accomplish this! Here is a very short instructional video on how to do this:

I do this all the time. If you get a pair of metal cutting shears/dikes at the hardware store it is a lot easier, especially around that thick pelvic area.
