Roasted Spicy Sweet Potato Wedges

These sweet potato wedges are super easy to make and they are packed with flavor! All you need to do is preheat an oven to 400 degrees. Peel 4 or 5 large sweet potatoes and cut them into wedges. Place them into a roasting pan or an oven proof dish. Drizzle them with salt, pepper, some brown sugar and cayenne pepper – I used about 2 tablespoon brown sugar and 2 teaspoons cayenne pepper. Toss them so they coat well. Place them on the oven and roast them for 30 to 35 minutes, until they are cooked through and start getting little brown. Make sure you shake the pan a couple of times while they are cooking in order to keep them from sticking to the bottom of your pan. Serve them as a side for just about anything. We had them with lemon cilantro tilapia. Delish!
