‘Chipped Beef’ on Biscuits

Here is a very easy and satisfying meal that I learned from my husband. Although it is typically made with dried beef, I make it with ground beef. It tastes wonderful! Here is what you are going to need for these:

2 pounds ground beef
4 scallions, chopped (reserve the dark green parts for garnish)
4 garlic cloves, minced
½ tsp. dries thyme
Salt & Pepper
White sauce
8 buttermilk biscuits

Brown the beef in a large skillet. Season it with salt & pepper. Drain the excess fat.
Wipe the skillet and add some olive oil. Heat and add the scallions. Mix well. Add the garlic and cook for a couple of minutes. Return the beef to the skillet. Mix well. Season with salt, lots of black pepper and thyme. Add as much white sauce as you like.

Cut two biscuits through the middle and place on plate. Cover with the beef and serve.

4 TBS butter
3 TBS flour
4 cups milk
¼ tsp. ground nutmeg
Salt & Pepper

Melt the butter in a heavy pot. Whisk in the flour, a little at a time. Whisk constantly for 3 to 4 minutes until lour cooks. Add the milk, whisking constantly in order to prevent lumps. Season with salt and pepper. Add the nutmeg. Whisk constantly until sauce comes to a soft boil and thickens.
