How do I Bake a Potato – Loaded Baked Potato

Baked potatoes are great! You can make them as a side or as a meal all together. I do not like wrapping my baked potatoes in foil. I use Russet potatoes which I scrub and then coat in olive oil, coarse salt and freshly ground pepper. I then place them on a baking sheet in an oven previously heated at 375 degrees. Depending on the size, they should be ready anywhere between 60 to 75 minutes.

Once they are done – I test them by piercing them with a paring knife – I take them out of the oven and let them sit for a few minutes. Then I slit them in the middle and add a little piece of butter, a spoon of sour cream, homemade bacon bits and finely chopped chives. You can add shredded cheese on top as well. Delicious!

Try making little baked potatoes for brunches. Nice alternative to hash browns or country potatoes.

    what other items can you serve with a loaded baked potatoe? Green salad????

    Absolutely! A nice green salad with salad greens, cucumbers, radishes, tomatoes and shaved carrots will go great with this. If you omit the bacon pieces you will have a nice vegetarian meal.
