Recipes for Jicama – Jicama & Bell Pepper Slaw

Jicama a.k.a. Mexican turnip is a Mexican grown root that is crispy – kind of like a water chestnut – and somewhat nutty and sweet. It is very low in calories and naturally fat free. It is also loaded with Vitamin C, fiber and potassium.It is great to add to salads and to eat with lime and chili powder. It is also a fantastic substitute for chips when eating salsa.

Bell peppers are loaded with fiber and vitamins A,C,E,K and B6. They also have Potassium, Manganese, Thiamin, Riboflavin, Niacin, Folate, Pantothenic Acid and Magnesium. Sounds like a super food to me! This recipe calls for 3 different colors of bell peppers. However, if you can not find these on sale they can be really expensive. So, don’t fret if you only want to use green bell peppers – the least expensive kind. If you do end up buying red, yellow and green make sure you use the remainder bell peppers in a different dish – such as fajitas. Please do not forget them in the fridge and let them go to waste!
Here is what you are going to need for this:
2 cups shredded green cabbage
2 cups very finely julienne jicama
1/4 cup green bell peppers, cut into fine strips
1/4 cup red bell peppers, cut into thin strips
1/4 cup yellow bell peppers, cut into thin strips
- Mix all of the chopped veggies in a large bowl.
FOR THE DRESSING:
1/4 cup olive oil
2 TBS freshly squeezed lemon or lime juice
2 TBS white wine vinegar2 TBS honey
2 TBS minced red onion
1 minced garlic clove
1 tsp ground cumin
4 TBS chopped cilantro
2 TBS chopped mint
- Place the red onion into a small bowl and add the lemon juice. Allow to stand for a 5 minutes. Add the garlic and cumin. Whisk in the honey, vinegar and the olive oil until nicely emulsified. Add the cilantro and mint.
- Pour the dressing onto the veggies and toss to coat well. Cover and refrigerate for at least 1 hour. Serve as a side for burgers, chicken or anything your heart desires. Enjoy!
