This chicken salad recipe is made with apples, celery, scallions, walnuts and a little bit of curry powder. It is super easy to make and very tasty. Serve it in a sandwich or on top of your favorite garden salad.
Although I cooked my own chicken for this chicken salad recipe it is a great way to use left over chicken. Rotisserie chicken is fantastic in this.
You can also use chicken breast for this. I like using thighs and legs because they tend to be less dry. Although I used mayonnaise you can substitute it with plain yogurt. It will taste delicious as well.
This is what you are going to need for this delicious chicken salad recipe:
Serves four
2 legs and 2 chicken thighs, cooked, skinned and shredded
1 large Gala apple, chopped
2 scallions, white and green parts chopped
2 celery stalks, chopped
½ cup walnuts, chopped
1 teaspoon curry powder
3 tablespoons mayonnaise
Salt & Pepper
Mix the chicken with the apples, scallions, celery stalks, walnuts, curry powder and mayonnaise in a bowl. Add the salt and pepper to taste. Mix it well.
Serve this chicken salad in a roll as a sandwich with lettuce or on top of a garden salad with your dressing of choice.
