
Here’s a delicious, inexpensive recipe for chicken salad with apples and curry. It is truly wonderful! Here is what you will need to do for this:
2 legs and 2 chicken thighs, cooked, skinned and shredded
1 large Gala apple, chopped
2 scallions, white and green parts chopped
2 celery stalks, chopped
½ cup walnuts, chopped
1 teaspoon curry powder
3 tablespoons mayonnaise
Salt & Pepper
• Mix all ingredients in a bowl.
• Use on top of a bed of lettuce or in a roll as a sandwich. Enjoy!
