This recipe is more of the traditional spinach salad with bacon and hard boiled eggs. The dressing is a sweet vinaigrette which matches perfectly with all the other flavors. This is what you need for this:
1 – 12 oz.bag baby spinach leaves, washed and dried
6 bacon strips, cooked and cut into small pieces
2 hard boiled eggs, peeled and chopped
8 white mushrooms, sliced
1 large tomato, sliced
1/2 cup vegetable oil
1 medium lemon, juiced
2 tablespoons white vinegar
3 tablespoons granulated sugar
Salt & Pepper
Place all the ingredients in a large bowl.
In a separate bowl, whisk together the oil, lemon juice, vinegar and sugar. Season with salt and pepper. Whisk to mix well.
Drizzle salad dressing on the salad and toss carefully – be careful not to mash the egg. Make sure you coat all the spinach leaves well.
