We will be using drumsticks and thighs for this barbecue chicken in the oven. We will first rub the chicken with spices and then make a special sauce to finish cooking it.
This is a very easy and extremely flavorful recipe. You can serve these at room temperature or warm. They go very nicely with sweet potato fries and Cole-slaw. They are also a great addition to any lunch box for school or the office.
This barbecue chicken in the oven is great for potlucks or picnics.
Here is what you will need for this finger licking good barbecue chicken in the oven recipe:
Serves six
6 chicken thighs and 6 chicken drumsticks
2 teaspoons salt
1 teaspoon ground pepper
1 teaspoon paprika
1 teaspoon garlic powder
½ cup ketchup
2 tablespoons brown sugar
2 tablespoons mustard
1 tablespoon soy sauce
½ tablespoon Worcestershire sauce
Preheat oven to 375 degrees.
Rinse and pat dry chicken. Place in an ovenproof dish, thighs meat side down.
In a small bowl, mix together the salt, pepper, garlic powder and paprika.
Rub the chicken with the salt mixture, making sure you get both sides of the drumsticks (thighs skin only).
Place chicken in oven and cook for 20 minutes.
In the meantime, mix the ketchup, mustard, Worcestershire, brown sugar and soy sauce in a bowl. Mix well.
Remove the chicken from the oven and brush the ketchup sauce on all the pieces.
Return to oven and cook for 15 more minutes. Remove and repeat the process making sure to discard any extra fat or liquid that the chicken might have rendered. Flip over the chicken drumsticks and brush sauce on the un-brushed side. Cook for another 10 minutes. Remove, brush again, and finish cooking for another 10 minutes.
Serve and enjoy!
