Best Chicken Recipes – Skillet Breaded Chicken ‘Pizza’

For this recipe you will need chicken milanesas (breaded chicken breasts) , pizza sauce and Provolone cheese. If you do not have time to make the pizza sauce – go ahead and use store bought. However, making pizza sauce is really easy so I would encourage you to make your own.

Making breaded chicken is easy and really good. The great thing is that you can feed four people with 2 chicken breasts and will probably have left overs. Here is what you will need for these:

2 skinless, boneless chicken breasts
2 eggs
1 cup flour
1/2 teaspoon garlic powder
1/2 teaspoon paprika
Salt & Pepper
1 cup bread crumbs

Rinse and pat dry the chicken breasts. Using a sharp knife butterfly the breasts so you have 2 equal sized, thinner pieces from each one.

In a bowl mix the flour, garlic powder and paprika. Season with salt and pepper.

In another bowl, lightly beat the eggs with a fork.

Put the bread crumbs into a third bowl. Season with salt and pepper.

Using a meat mallet, pound the chicken breast until it is thin and gets larger in size. You can place the chicken between two pieces of plastic wrap to pound it if you want. I pound my meat directly on my cutting board. (Make sure you wash and disinfect your board after you are done).

Place the pounded meat into the flour and coat well. Shake off the excess flour. Place the chicken into the egg and coat well. Shake off the excess egg and place the chicken into the bread crumbs. Make sure you coat the chicken well on both sides.

For the pizza sauce you are going to need:
1 – 6oz. can tomato paste
1 1/2 cups water
1/2 cup olive oil
2 garlic cloves, minced
1 TBS fresh basil, chopped
1/2 TBS crushed oregano
1/2 TBS crushed Rosemary

Whisk all if the ingredients in a bowl. Refrigerate the sauce for 1 hour so all the flavors meld together.

Heat a large skillet with some olive oil. Place the breaded chicken in the hot pan. Reduce the heat to medium and cook for 4 to 5 minutes until browned. Flip chicken and top with pizza sauce. Cover with a piece of Provolone cheese. Cook the other side for an extra 5 minutes, until browned and cheese had melted. Be careful not to burn the chicken! Serve with sides of your choice. I served mine with French fries. Enjoy!
