This corn bread is somewhat cakey and can be served alone or as a side dish. It is made with white corn and is quite a treat. It’s sweetness goes really well with spicy food. Here is what you are going to need:
8 ears of corn, preferably white – kernels removed
Milk for processing as needed
1 – 8 oz. can condensed milk
4 eggs – lightly beaten
1/4 cup melted butter
1/2 cup flour
2 tsp baking powder
1 tsp cinnamon
8 slices white cheese
Salt / Paprika
Preheat the oven to 350 degrees.
Place all of the corn kernels in a food processor. Add milk, as necessary, until you have a smooth consistency.
Transfer the processed corn into a large bowl. Add the eggs, butter, condensed milk, flour, baking powder and cinnamon. Season with salt. Whisk well.
Butter an oven proof dish (9×13 inches or a round one). Add the corn mixture. Arrange the cheese slices on top. Garnish with paprika for color. Place dish in oven.
Bake the corn for 45 to 50 minutes – until a cake pin comes out clean. Remove from oven and allow sitting for a few minutes. You can serve this cold or warm. Enjoy!
