These scrambled eggs are fantastic! The sundried tomatoes and thyme really add a lot to them. What a great way to start the day. Here is what you are going to need for 2 people:
1/4 cup sun-dried tomatoes in olive oil – chopped
1/2 tsp. dried thyme
Salt & Pepper
Place the eggs in a bowl and whisk until uniform. Add the sun-dried tomatoes and thyme. Season with salt and pepper.
Heat a skillet with some butter. Pour the eggs into the pan. Allow them to set a little and moving them form the center of the pan out. You want to move the runny, raw eggs away from the center so they cook. Please do not stand in front of the pan and stir your eggs ruthlessly! They will dry up. Work slowly, moving the cooked egg to the center and the runny egg to the edges. Once your eggs are cooked but moist, turn off the heat and serve. Enjoy!
