Cream of Spinach Soup

Spinach soup.

This cream of spinach soup is very healthy. It is thickened with potato instead of a roux which lowers the carbs and the calories. This is a favorite at our house which even the kids love to eat so we make it often so they get all the nutrients!

This cream of spinach soup is loaded in protein, calcium, iron, vitamin C, Magnesium and fiber. It is very good for you and will satisfy you.

I like to garnish this with shoestring potatoes or croutons. You can also add fish crackers (a huge hit with the kids) if you prefer. Frankly, you do not need to garnish it at all if you don’t want to. A splash of cream will also do the trick.

Once you add the cream make sure not to boil it. You do not want it to curdle on you. Simply heat it through and serve. You can use sour cream or Greek yogurt for this recipe is you prefer.

This is a silky super nutritious cream that you can enjoy anytime of the year but especially on cold days. It can be prepared in less than 30 minutes. Don’t forget some crusty bread and butter to complete it.

Here is what you are going to need for this delectable cream of spinach soup:

Serves four
1 small yellow onion – halved
1 garlic clove – whole
1 celery stalk with leaves (if possible) – halved
2 small potatoes – peeled
1 small carrot – peeled
1 small zucchini – trimmed and cut in 3
1 pound spinach leaves
6 cups water
1/2 cup heavy cream or Greek yogurt or sour cream
Salt & Pepper

Place all of the ingredients – except for the spinach and the cream in a pot. Bring to a boil, reduce heat, and simmer for approximately 20 minutes – until potatoes and carrot are cooked.

Remove the onion, garlic and celery. Discard. Add the spinach and cook for a few minutes – until leaves are wilted. Turn the heat off and allow the soup to cool a bit. If you have a hand-held immersing blender use it and blend all the veggies. If you do not have one – ladle the soup into a blender glass and blend it in batches.

Return the blended soup into a pot and heat. Add the cream, season with salt and pepper and heat through. Serve garnished with crackers, croutons or shoestring French fries or a splash of cream.
