Asian lettuce wraps are fresh and delicious. These are made with chicken and it is flavored, mixed with vegetables and them served inside a lettuce leaf.
These little wraps can be made with beef or pork as well. You do not need to change any of the marinade ingredients. They will work fine.
You will need to marinate the meat for at least 2 hours for this recipe so please allot the proper time. You could marinate it overnight as well.
This recipe will be stir fried which means it will cook very quickly at very high heat. It is very important that you have all your ingredients prepped before you start cooking the meal. You will not have time to do so once you begin. But, once you start you will be done in a jiffy.
Here is what you are going to need for these chicken asian lettuce wraps:
2 whole chicken breasts – skinned, deboned and finely cubed
FOR THE MARINADE:
½ cup soy sauce
½ cup rice wine vinegar
2 TBS brown sugar
3 garlic cloves – minced
1 – 1 inch piece fresh ginger minced
3 scallions – white, light green and dark green finely chopped
FOR THE STIR-FRY LIQUID:
1/2 cup soy sauce
¼ cup rice vinegar
½ tsp. hot mustard
FOR THE WRAPS:
2 carrots – grated
1 cup finely chopped mushrooms
½ cup bean sprouts
1 ½ TBS chopped cilantro
1 TBS chopped peanuts
Iceberg lettuce leaves – carefully separated and cut to size of preference
Vegetable or Peanut Oil
Mix the marinade ingredients in a bowl. Place the chicken in a glass or ceramic bowl and cover with the marinade. Refrigerate, covered, for at least 2 hours.
Mix the stir-fry liquid in another bowl.
Heat a wok or large skillet with some vegetable or peanut oil until almost smoking. Remove the chicken from the marinade and cook – working in batches – for a few minutes. Set aside.
Wipe the skillet and add some more oil. Heat well. Add the carrots, mushrooms and sprouts. Drizzle some of the stir-fry liquid and cook for 4 to 5 minutes. Return the chicken to the wok. Add the cilantro, the peanuts and the remaining liquid. Mix well and heat through.
Place filling in iceberg lettuce leaves. Serve and enjoy!
