Gnocchi are a delightful potato dumpling that you can serve as a side or a main dish. They are very versatile as you can serve them with any sauce you want. They are also quite easy to make and very tasty. Here is what you are going to need for this:
6 Russet potatoes – peeled and cut into large chunks
1 cup + 3 TBS flour (approx.)
Place potatoes in a steamer and steam until tender – about 20 minutes.
Run cooked potatoes through a potato ricer or mash with a fork. Spread the mashed potato on a clean board and allow it to cool down completely and dry up a little.
Return the potatoes to a bowl and add eggs. Mix in the eggs using a fork. Add 1 cup flour and start to knead – gently. Add extra flour – a tablespoon at a time – until you have uniform, non-sticky dough.
Generously dust a baking sheet with some semolina.
Cut off a piece of dough and roll into a long rope. Cut rope into 1 inch pieces. Gently press the potato piece against a fork to form indentations. Place the formed gnocchi on the pan with the semolina.
Bring a large pot of salted water to a boil. Gently add the gnocchi to the water. Work in batches so as not to crowd the pot. When the gnocchi resurface and
start floating, remove them with a slotted spoon. Set them in a pan as they cook. Serve with your sauce of choice. Enjoy!
