This is one of those meals that you can make very quickly and inexpensively. Make it with low fat plain yogurt and you have a pretty healthy meal. If you like curry you will like this for sure. Here is what you are going to need for this:
2 pounds top sirloin beef – cut into thin strips
1 large yellow onion – thinly sliced
1 TBS grated fresh ginger
3 TBS curry powder
½ cup beef broth
2 tsp. flour
1 ½ cups plain yogurt – you can use low fat
½ cup garbanzo beans
1 cup torn spinach leaves
Salt/ Pepper/ Oil
Season the beef with salt and pepper. Heat a wok or skillet with some vegetable oil until it starts smoking. Add the beef in batches and brown on all sides. Remove from heat and set aside.
Wipe the skillet and add more oil. Heat well. Add the onion and ginger. Mix well and cook for about 9 minutes. Add the curry powder, mix well, and cook for about one minute. Return the beef to the pan.
While the onions are cooking, mix the beef broth, flour and yogurt in a bowl. Whisk well to dissolve all the flour.
Add the yogurt mixture to the beef. Mix well and bring to a soft simmer. Cook, over low heat, for about 20 to 30 minutes. Add the garbanzo and the spinach. Mix well. Cook until the spinach is wilted and the garbanzo heats through.
Serve with rice and enjoy!
