This smoked paprika chicken stew is delightful and super easy to make. You will find a nice rich balance between the smoked paprika and the sour cream in this recipe. However, you can go ahead and substitute smoked paprika for regular Hungarian paprika if you prefer.
This is a great weeknight meal that can be made in around 30 minutes. Serve it with rice or mashed potatoes to mop up the sauce.
Here is what you are going to need for this delicious and easy smoked paprika chicken stew recipe:
1 whole chicken – cut into 8 pieces OR 4 thighs and 4 legs
1 medium red onion – sliced
1 large bell pepper – sliced
4 garlic cloves – minced
1 TBS smoked paprika
4 cups chicken stock
1 TBS flour
3/4 cup sour cream
Butter/ Salt/ Pepper
Rinse and pat dry the chicken. Season generously with salt and pepper.
Melt some butter in a pot. Add the chicken and brown evenly on all sides. Work in batches and do not crowd the chicken.
Remove all but 2 TBS of rendered fat. Add the onion, bell pepper and garlic. Mix well. Cook for about 3 to 4 minutes until vegetables are soft. Add the paprika and mix well. Add the chicken stock. Bring chicken to a boil. Reduce heat, cover pot and simmer for about 30 minutes.
Remove chicken from pot. Place flour in a small bowl and add some of the gravy. Mix well – until you have a smooth paste – and return to the pan. Add the sour cream and heat through. Return the chicken to the pan and mix well.
Serve with mashed potatoes or rice. Enjoy!
