Tortilla Casserole

This is an easy and delicious meal for any weeknight. It is very frugal and everyone loves it! Here is what you are going to need for this:

1 pound ground beef
1 medium yellow onion – chopped
1 large tomato – peeled and chopped
2 TBS chopped cilantro
2 TBS taco seasoning
¼ cup water
12 corn tortillas
2 cups beef broth
2 cups salsa – homemade or store bought
1 – 16 oz. can re-fried beans
1 cup shredded white cheese and
1 cup shredded Cheddar cheese OR
2 cups Mexican blend cheese
1 cup sour cream

Preheat your oven to 350 degrees.

Place the meat and onion in a skillet. Brown meat and drain in a metal colander. Return drained meat to skillet and add tomatoes, cilantro, taco seasoning and water. Mix well and cook for about 20 minutes.

Spread about ½ cup salsa on the bottom of a 9×13 oven proof dish. Soak the tortillas – one by one – in the beef broth for about half a minute. Place six tortillas on top of the salsa. Spread the beans, carefully, on to the tortillas. Add the meat and spread well. Layer with about ½ cup shredded cheese. If using olives place them on the meat before you add the cheese.

Soak the remaining tortillas and layer on top of the beef. Carefully spread sour cream on the tortillas. Top with the remaining salsa and spread well. Add the remaining cheese.
Place in oven and bake for about 30 minutes – until sauce is bubbly and cheese melts. Remove from oven and allow sitting for about 10 minutes before serving. Serve with avocado slices and extra sour cream if desired. Enjoy!
