This chicken taco recipe can be made with shredded left over or rotisserie chicken. It is cooked with spices and then served on a tortilla with salsa, chopped onion and cilantro.
If you are cooking chicken from scratch you can go ahead and use only breast if you would prefer. As for the salsa that you use it can definitely be your favorite store bought one. However, making it at home is very simple and it lasts for a long time in the fridge.
These little tacos are great when you want to eat something different and don’t have much time for cooking dinner. You can use corn or flour tortillas. If you use corn you will need to use two tortillas per taco. Otherwise, your tortilla will get soggy and collapse.
Here is what you are going to need for 8 tacos:
2 cups shredded chicken
1 TBS ground cumin
1 TBS ground garlic powder
1 TBS black pepper
1 TBS salt
Finely chopped white onion
Finely chopped cilantro
16 small corn tortillas or 8 small flour ones
Place the shredded chicken in a large skillet. Season with ground garlic, cumin, salt and pepper. Mix well and cook for a few minutes.
Heat the tortillas. Place two together and add chicken, onion, cilantro and salsa. Serve and enjoy!
