These potatoes are great for breakfast or brunch. They also make a nice side for any dish you like. You will need to have cooked potatoes so make sure you plan ahead. Here is what you are going to need for these:
6 cooked, peeled potatoes – diced
8 bacon strips – chopped
Splash of water
1 large white onion – chopped
1 bell pepper – diced
Oil/ Butter/ Salt/ Pepper
Place the chopped bacon in a large skillet with a splash of water. Cook until bacon is crispy. Set aside keeping the rendered fat in the pan.
If there is not enough fat, add some oil and a little butter. Add the onions and cook for about 8 minutes – until softened and translucent. Add the bell peppers and cook for another 5 minutes until onion starts to brown. Set aside.
Add some more butter to the pan and brown your potatoes – in single layers – for about 12 minutes. Work in batches if necessary.
Return all potatoes, onion and peppers and bacon to the pan. Season with salt and pepper. Garnish with chopped parsley. Serve and enjoy!
