Saffron is not a cheap spice. However, this recipe calls for only a pinch of it. The final result is such a fantastically, fragrant and fluffy rice that it is well worth the cost. Make this for special occasions as this rice is beautiful for entertaining. Here is what you are going to need for this:
4 cups chicken stock
Pinch of saffron
2 TBS olive oil
2 TBS minced onion
2 cups Basmati or white, long grain rice
Heat the chicken stock. Add the saffron, cover the pot and allow to sit for 10 minutes.
Heat a skillet with the olive oil. Add the onion and cook until lightly browned. Add the rice and cook, stirring often, until it dries up on all sides. Do not brown it.
Add the rice to the hot stock. Season with salt. Bring to a boil. Cover and reduce the heat. Steam the rice for 20 minutes. Do not uncover the pot for any reason! Turn off the heat and fluff the rice with a fork. Serve as a side for your favorite dish. Enjoy!
