Recipe for Crab Rangoon

Crab rangoon are a crispy and delectable American Chinese appetizer that are sure to please. They are quite easy to make and deliver loads of flavor. I could not find crab meat anywhere down here so I used artificial crab meat a.k.a. Surimi. Surimi looks a little like crab – kinda, sorta – smells like crab and tastes like crab. It is also a lot less expensive. So, whichever route you decide to take – real or not – I promise you will be very happy with these. Here is what you are going to need for these:

8 oz. crab meat
8 oz. cream cheese
1 scallion – finely chopped (white, light green and dark green parts)
1/2 TBS finely minced red onion
2 large garlic cloves – minced
1 tsp. soy sauce
1/2 tsp. Worcestershire sauce
20 – 24 wonton wrappers
Vegetable oil

Mix the crab, cream cheese, scallion, red onion, soy sauce and Worcestershire sauce in a bowl. Cream it into a paste.

Place a wonton wrapper in front of you forming a diamond. Place a heaping teaspoon of crab filling in the middle and spread it out to the ends. Wet the edges of the wrapper with some water and fold – spreading the filling as you do so. Seal edges well with water. Place the filled wrappers in a baking sheet and cover with a damp, clean dish cloth.

Heat a skillet or wok with oil – until oil is hot but not smoking. Add the crab rangoon a few at a time, without crowding the pan. Fry until browned and crispy. Remove to a paper towel lined dish to drain excess oil. Serve with sweet and sour sauce. Enjoy!
