Baking Chicken Recipes – Lime Infused Baked Chicken

This chicken is very easy to make. The lime infuses the meat and it is moist and tasty. I baked this chicken on its side. I do that in order to get it to brown evenly and to keep the breast meat from drying out. Here si what you are going to need for this:

1 – 3 to 4 pound whole chicken
Salt & Pepper
2 limes
2 TBS olive oil
2 TBS butter

Preheat oven to 350 degrees.

Place chicken on a roasting pan rack. Season generously with salt and pepper – on both sides and inside the cavity.

Cut one of the limes into 4 pieces. Squeeze the quarters on the chicken and place the peels inside the cavity. Tie the legs with some kitchen twine.

Melt the butter with the olive oil. Drizzle the oil on the whole chicken – both sides and inside the cavity. Place the chicken on its side.

Put the chicken in the oven and bake for about 1 hour. Remove pan from oven and squeeze the second lime on the chicken. Put the chicken back into the oven and bake for an additional 30 minutes – approx. – until thigh meat registers 170 degrees or, when thigh is pulled away, only clear juices run out.

Carve chicken and serve. Enjoy!
