This recipe is made with slow cooked left-over pork loin. If you didn’t cook this you will need about 2 cups of shredded pork for 4 people. Here is what you need for this:
2 cups shredded pork
1 large lime
1 medium avocado – diced
2 TBS chopped cilantro
2 TBS chopped bell pepper
2 TBS minced red onion
3 small tomatoes – diced
Heat your tortillas by wrapping them in foil and placing them in the oven at 300 degrees.
Place the shredded pork in a skillet. Squeeze half of the lime on the meat. Season with salt. Heat through.
Place the avocado, cilantro, bell pepper and red onion in a bowl. Season with the remaining lime and some salt. Toss to mix well.
Serve each tortilla with some pork and top with salsa. Enjoy!
