Tonight I cooked salmon with dill, couscous and pan steamed asparagus. I was strapped for time so this was a wonderful choice as dinner was on the table in no time! I used frozen salmon fillets because they are a lot cheaper than fresh ones! Here is what you will need:
4 frozen salmon fillets, thawed
2 large lemons
2 tablespoons butter
4 sprigs fresh dill
1 1/2 cup couscous
1 1/2 cup chicken stock
1 bunch asparagus
2 tablespoons soy sauce
1/2 cup water
So, first you need to rinse and pat dry the fish. Preheat the oven to 375 degrees. Place the fish in an oven proof dish and squeeze one lemon on the fish. Cut 1 tablespoon into four pieces and place one on each fillet. Top with the dill and put in the oven. Cook it for 20 to 25 minutes. This is how your fish should look:
Next, cut the tough ends off the asparagus. Rinse and pat dry it. Add the remaining butter, soy sauce and water in a skillet. Melt the butter and mix well. Add the asparagus, season with black pepper and cook for 15 minutes. Do not overcook it! You want to keep it crisp!
In the meantime, bring the 1 1/2 cup chicken stock to a boil. Turn the heat off. Add the couscous and mix well. Cover the pot and allow to sit for 5 minutes. Fluff with a fork.
Cut the remaining lemon into eighths. Serve salmon, couscous and asparagus with lemon wedges on the side. Enjoy! Delicious, nutritious and affordable dinner!!
