Recipe for Gazpacho Soup

Gazpacho is a cold tomato soup that is deliciously fresh! It is made in a snap and is great as an appetizer or as a light meal. It is also quite healthy as it has no fat and is loaded with fresh veggies. Here is what you are going to need for this:

1 46 oz. can tomato juice
4 very ripe tomatoes, peeled and chopped
2 small cucumbers, peeled, seeded and chopped
1 green bell pepper, chopped
1 medium sweet onion, chopped
1 garlic clove, minced
2 tablespoons olive oil
1 tablespoon red wine vinegar
Dash tabasco
Salt & Pepper

Mix all ingredients in a bowl. Season with salt and pepper. Cover and refrigerate for at least 1 hour. Serve.

    I do not like cucumber, so I put in 1 more small pepper. Very good and refreshing on a hot summer night.
