This grilled cheese sandwich is made with tomatoes and basil. It is very easy to make and is a great weeknight meal.
Sometimes I will go ahead and melt the butter in a skillet and let the bread grill as I assemble the sandwich. Other times I will go ahead and butter the bread. You can decide which you prefer. In thie recipe I melted the butter first.
This is a very nice sandwich for summertime when tomatoes are in season and at their very best. Make sure to use a ripe tomato and fresh basil leaves for an optimal result.
Here is what you need to do for this grilled cheese sandwich:
Makes one sandwich
Butter
2 pieces of bread
1/4th cup of shredded cheddar cheese
2 slices of tomato
1 TBS chopped basil leaves
Melt some butter in a large skillet. Add two pieces of bread. Top with half of the shredded cheese. Allow the cheese to melt for a little bit.
Top each piece of bread with 2 tomato slices and some chopped basil. Add the remaining cheese on top of the tomatoes. Cover it with a second piece of bread.
Carefully flip the sandwich. Press down on it to help the bread brown and the cheese melt. Add a little more butter to the pan. Flip the sandwich a couple of times until the bread is grilled and the cheese is melted.
Remove the sandwiches from the pan. Cut them on the bias and serve. Enjoy!
