Makes 48 cookies
1 cup flour
¼ cup dark unsweetened cocoa powder
½ tsp. baking soda
1 ¼ cup softened, unsalted butter
¾ cup light brown sugar
1 ¼ cup white sugar
¼ cup room temperature water
1 tsp. salt
2 tsp. vanilla extract
¼ tsp. black pepper
2 eggs – room temperature
6 oz. milk chocolate chips
6 oz. dark chocolate chips
Preheat the oven to 350 degrees. Line your baking sheets with a silicon mat or parchment paper.
In a bowl mix together the flour, cocoa and baking soda. Set it aside.
In another bowl, cream the butter and sugars until nice and uniform. Add the water, salt, vanilla, black pepper and eggs. Beat until you have a smooth cream.
Add the flour mix to the creamed butter. Mix only until it is all uniform. Do not over-beat.
Add the chocolate chips and mix in. Your dough will be sticky but do not worry about it. It is supposed to be for the cookies to be crisp.
Spoon or scoop the dough onto the baking sheets. Leave 2 inches between each cookie as they will melt and flatten while cooking. Bake the cookies for 17 to 20 minutes – until the cookies start having a light brown edge. Remove them from the oven and leave them on the sheet for about 5 minutes before transferring them to a cooling rack. Serve and enjoy!
