This shrimp skewers recipe will render you the juiciest and most flavorful shrimp you can imagine. We will be marinating the shrimp in a cilantro based marinade that will make these exquisite.
Although this shrimp skewers recipe is meant to be cooked on a grill it can certainly be cooked on the stove so no worries. Heck, I sometimes just cook the marinated shrimp in a skillet and serve is as an appetizer.
Cooking food on skewers makes them very easy to serve and eat. I am using wooden skewers here and it is important to note that they must be soaked properly or they will burn. You have to soak them before you shred the shrimp — or any other meats or vegetables that you are grilling. This has to be done as well if you are cooking them in a large skillet on the stove.
One big recommendation is that you make sure the shrimp is deveined. That means that the black vein that runs on the shrimp’s back has been removed. This vein is the shrimp’s intestine and it is gritty and foul tasting. It will ruin your beautifully marinated shrimp so please take the time to do this.
Deveining shrimp is tedious but, in my humble opinion, a complete and absolute must. Frozen shrimp is usually already taken care of. However, I do have a video on how to do this if you are interested.
Finally, shrimp cooks very quickly and should not be over-cooked because it will turn rubbery. Please be diligent about looking over these so you have a wonderfully delicious result. Generally 7 to 8 minutes total cooking time will do.
You will need to marinate your shrimp for a good 30 minutes for this shrimp skewers recipe so make sire you allot the proper time for this. Here is what you need to do:
1 pound shelled, deveined shrimp
1 bunch cilantro
1 small white onion, quartered
4 garlic cloves, halved
1 large lemon, juiced
1/2 cup olive oil
1 tablespoon coarse slat
Freshly ground black pepper
Rinse the shrimp and put it in a bowl of ice water. If you are using wooden skewers place them in the same bowl.
Place the onion, cilantro, garlic, lemon juice and coarse salt in a food processor and puree. Slowly add the olive oil until you have a smooth mixture.
Skewer the shrimp and place in a baking dish. Add the marinade and coat the skewers evenly. Cover with plastic and place in the refrigerator for at least 30 minutes.
Heat the grill for 20 minutes on high. Reduce the heat. Oil your grilling racks with a wadded paper towel soaked in olive oil. Place the skewers on the grill and cook for approximately 3 to 4 minutes, until shrimp turns pink. Flip skewers over and cook the other side.
