This lentil salad is very easy to make and is loaded in nutrients and flavor. We are going to make it with a mustard vinaigrette which complements the nuttiness of the lentils beautifully.
Lentils are considered a super food due to their high nutritional values. A cup of cooked lentils packs about 18 grams pf protein, almost 16 grams of fiber and folate, iron and potassium – among other things. They are nutty in flavor and one of the easiest nuts to cook. When they are fresh they will cook in as little as 20 minutes without overnight soaking. This makes them great for super healthy, quick weeknight dinners!
This recipe is also quite easy to make. It is loaded in flavor and is good for you! You can eat this as a side salad or as a light, vegetarian meal. You can double or triple this recipe with no problems.
Here is what you are going to need in order to make this healthy and delicious lentil salad:
1 cup cooked lentils
1/3 cup diced bell pepper
1 scallion – chopped
1/2 a chili pepper – such as jalapeno, serrano or poblano – seeded, membrane removed and diced
1 TBS chopped parsley
1 TBS Dijon mustard
1/4 cup red wine vinegar
1/4 cup olive oil
Salt & Pepper
Place the lentils, bell pepper, chili pepper and scallion in a bowl. Toss to mix well.
In another bowl – place the mustard, vinegar and black pepper. Whisk to mix well. Slowly add the olive oil, while whisking constantly, to emulsify your vinaigrette.
Add the vinaigrette to the lentils. Mix well. Serve – preferably at room temperature.
