Shawarma is an Arabic meat that is typically cooked on a vertical spit for a long time. It can be made of chicken, beef, turkey, veal and lamb — or sometimes a combination of meats. It is very popular in the Middle East and is absolutely fantastic.
This beef Shawarma recipe is a delight to eat. It is made with so many exotic spices that the final result is absolutely divine. Naturally, this is a home made version of beef Shawarma recipe so it is not the real deal. But it is close enough. You will love this sandwich.
Here is what you are going to need for this exquisite homemade version of beef Shawarma:
2 pounds of meat with some fat such as sirloin
4 large pita bread pockets cut in half or 8 large flat bread
FOR THE MARINADE:
¼ cup white or cider vinegar
¼ cup olive oil
Zest of ½ medium lemons
Juice of 2 medium lemons
5 garlic cloves – chopped
¼ tsp. freshly grated ginger
½ tsp. of cayenne
½ tsp. of ground cloves
½ tsp. of ground cinnamon
1 tsp. black pepper
½ tsp. nutmeg
½ tsp. oregano
1 tsp. salt
Mix all of the ingredients in a bowl and pour over the meat. Make sure you coat both sides. Cover and marinate overnight.
The following day – preheat your oven to 300 degrees.
Remove the beef from the fridge and allow it to come to room temperature. You always want to make sure large pieces of meat or poultry come to room temperature before you cook them in the oven. This will make for a uniformly cooked piece of meat.
Spread the marinade on the top of the meat so both sides are coated and seal the pan with aluminum foil. Roast the meat for about 2 hours or until the meat is very tender and you can separate it with a fork.
FOR THE SAUCE:
2 TBS. of Tahini (sesame paste)
Juice of 1 large lemon
2 garlic cloves – minced
Salt to taste
2 TBS of plain yogurt – preferably Greek style
Mix all of the ingredients in a bowl until you have a uniform paste. Set aside.
FOR THE VEGGIES:
2 small tomatoes – finely sliced
1 small cucumber – finely sliced
1 small red onion – finely sliced
Salt and olive oil
Place the veggies in a bowl and add salt and olive oil. Mix and set aside.
FOR THE SANDWICH:
If you are using a flat bread, spread the middle with the sauce and top with beef and veggies. Roll it and enjoy.
If you are using a pocket, separate it and spread some sauce in the middle. Add some beef and veggies and enjoy.
You can serve these with a side of French Fries if you like.
