Apple Bars with Salted Caramel

Apple Bars

How hard it is to describe these apple bars without sounding like I am grossly exaggerating. But, please believe me when I tell you that they are such a divine creation you will dream of them after you are done with them. Tart crisp apples, drenched in caramel sauce and sandwiched between crunchy crust . . heavens! I dare you to eat only one.

I used homemade caramel sauce for this recipe but you can definitely use store bought in order to save yourself come time. But is you do have the time, I encourage you to give my caramel sauce a try. I think you will love it.

These will make a great gift from you kitchen or a wonderful addition to any dessert table when you are celebrating any special occasion.

Here is what you are going to need for these delectable apple bars:

Makes 24 bars

Heat your oven to 400 degrees.
Line a 13×9 pan with aluminum foil – leaving extra foil on the sides so you can pull the bars out when done. Lightly butter the foil.

FOR THE CARAMEL:
1 cup sugar
6 TBS unsalted butter – softened
½ cup heavy cream – room temperature
½ TBS sea salt

Place the sugar in a pot – preferably heavy bottom. Turn the heat on high and allow the sugar to start melting. Shake the pan a couple times.
As soon the sugar starts to melt, lower the heat. Start swirling the sugar as it melts. Swirl, place back on low heat, wait a few seconds, swirl again. DO this until the sugar is completely melted and amber color.

Carefully add the butter and whisk it vigorously. Once it is incorporated, turn off the heat. Whisk in the cream – always being careful not to burn yourself with spatters. Pour the sauce into a bowl, without scraping the pot. If you have some left in the pot let it be. You do not want the caramel to crystallize. Allow the caramel sauce to cool down. Add the salt and mix well. Refrigerate any unused sauce for up to 4 days.

FOR THE APPLE FILLING:
4 cups peeled and diced green apples – 4 to 5 medium green apples
3 TBS sugar
½ cup flour
1 tsp. ground cinnamon
¼ tsp. ground nutmeg
¼ tsp. ground allspice
1 tsp. cornstarch

Place all ingredients in a bowl. Toss to mix well – making sure to coat all the apples. Set aside.

FOR THE CRUST:
1 packed cup brown sugar
¾ cup softened, unsalted butter
1 ¾ cups flour
1 ½ cups rolled oats
1 tsp. salt
½ tsp. baking soda

Place sugar and butter in a bowl and mix well. Add the flour, oats, salt and baking soda. Mix well – until all the dough is uniform.

Press all but 2 cups of the dough on the bottom of your pan. Add the apples and spread evenly. Pour the caramel sauce on the apples. Add the remaining oats on top of the apples and slowly press down.

Place the pan in the oven and bake for about 20 to 25 minutes – until the edges of your bars are golden. Remove from oven and allow cooling down completely. Remove the bars, with the foil, on to a cutting board. Cut the bars into 24 squares. Serve and enjoy!

    I’ve just finished making these with my Mum (she’s teaching me to cook before I go to University!), and I have to say this is one of the best recipes we’ve ever used! I love your caramel method and recipe. The caramel came out perfectly, and we never manage to get results this good!
