This potato salad with bacon is really quite spectacular. It is made with red potatoes, celery, celery leaves, parsley, bacon and finely chopped red onion. The dressing is made with mayo, sour cream, horseradish mustard and hot chili paste — which is optional.
I like this salad because it is not swimming in mayonnaise. The dressing is just enough to keep the salad moist. This salad is creamy and crunchy and spicy and outright delicious.
This potato salad with bacon is an excellent side for summer day recipes. It goes great with anything BBQ.
