IMG_3845

This mango and peach daiquiri slushy is made with only fruit and rum. If you like sweet desserts you will have to add some sugar to it as well although if you use ripe fruit that is in season you will not need it.

The types of sweetener you can use for this are sugar, simple syrup, agave or brown rice syrup. Obviously you do not need to make this dessert alcoholic. It will be super healthy and delicious as well.

An important thing to keep in mind when making this dessert is to use a shallow rectangular dish. This will allow the fruit to freeze faster and the process won’t take so long.

This mango daiquiri slushy is very refreshing and a great treat for lazy summer days.

This is what you need to make this delicious mango daiquiri slushy:

Serves eight
6 ripe yellow peaches – peeled and sliced
1 large mango – peeled and sliced
1 cup freshly squeezed orange juice
¼ cup light rum (optional)
Sugar or simple syrup or agave (optional)
A shallow rectangular dish

Place all the fruit and orange juice in a blender. If you are using sweetener and rum add it as well. Blend until you have no pulp left. If the mango you are using is stringy pass the blended fruit through a sieve.

Place the blended fruit in the container and freeze for 45 minutes. Remove from the freezer and rake through the fruit with a fork. Return the container to the freezer and repeat the process every 30 minutes until the whole thing in frozen and resembles an Italian ice or a slush.

Serve and enjoy.
