Easy Mashed Potatoes

These easy mashed potatoes come from our friend Jose Hermosillo on YouTube. They are made with pesto and blue cheese.

The pesto I used for this recipe is made with walnuts. Pesto can be made with pinenuts as well. However, pinenuts can be very expensive and are sometimes hard to find. Walnuts work beautifully.

You can use any type of blue cheese that you like for this recipe. The cheese goes very nicely with the pesto.

One important thing to remember is that potatoes absorb the salt that they are cooked in. So please do not add too much salt to the water when you are cooking them. You do not want your dish to be too salty especially after you add the cheese.

This is what you are going to need for these easy mashed potatoes:

Serves six
4 large Russet potatoes or any other mashing potato
2 TBS unsalted butter
½ to ¾ cups milk or cream
1-cup pesto sauce
4 oz. blue cheese
Salt

Peel the potatoes and cut in eight. Place them in a pot and cover with water. Add salt and bring to a boil. Reduce the heat to medium and cook the potatoes for about 20 minutes or until they are fully cooked through and soft.

Heat the oven to 350 degrees F (176 C) and lightly butter a 9×13 inch baking dish.

Transfer the cooked potatoes to a bowl and add about 1/4th cup of the water they cooked in. Add the butter and ½ cup milk or cream. Mash the potatoes until you have no lumps and it is smooth. If it is dry add the remaining milk or cream. Taste for salt and adjust.

Spread half of the potatoes on the bottom of the dish. Top with the pesto and spread well. Cover with the rest of the potatoes.

Sprinkle the blue cheese on the top and place the dish in the oven. Bake for about 20 to 25 minutes until the cheese has melted and browned a bit. If you have a broiler in your oven broil the potatoes for the last 5 minutes being very vigilant not to burn them.

Remove from oven and serve. Enjoy!
