Lemon Bar Recipe

This lemon bar recipe is incredibly easy to make and the final result is outstanding — melt-in-your-mouth shortbread topped with a tangy, lusciuos lemon cream. To die for.

A couple recommendations when you are making this recipe. First, make sure that the butter you are using in unsalted and is completely softened. This way you will be able to mix it by hand without any problems.

Secondly, use freshly squeezed lemon juice for this. If you use bottled or the juice that comes in plastic lemons you run the risk of having a slight bitter after taste. We do not want that!

You can keep these for up to four days in an airtight container in the fridge and they are best served cold. Delicious all around.

This is what you are going to need to make this wonderful lemon bar recipe:

Makes 25 bars
FOR THE CRUST:
1 cup (225 grams) unsalted, softened butter
2 cups (250 grams) all-purpose flour
½ cup (100 grams) sugar
¾ tsp. of lemon zest
¼ tsp. salt

Butter a 9×13 inch (23×33 centimeters) baking pan and heat your oven at 350° F (176°C).

Place all the ingredients in a bowl and mix them well with your clean hands.

Press the dough into the pan as uniformly as possible. Try and make it the same thickness all around.

Place the pan in the oven and bake for 15 to 20 minutes until lightly browned. Remove from oven and place on a cooling rack. Allow it to cool a bit while you make the filing.

FOR THE FILLING:
4 large eggs at room temperature
1 ½ (300 grams) cups sugar
½ cup (235 ml) freshly squeezed lemon juice (4 lemons)
1 TBS lemon zest
¼ cup (32 grams) all-purpose flour
Confectioner’s sugar

Place eggs and sugar in a bowl and whisk until well mixed. Add all the other ingredients and whisk until you have a smooth mixture with no lumps of flour in it.

Pour the mixture onto the baked crust and place it back in the oven for about 20 minutes until it is set and firm.

Remove the pan from the oven and cool it completely on a cooling rack. Once it is completely cooled place the pan in the refrigerator for 30 minutes.

Remove the pan from the refrigerator and sprinkle with a generous amount of confectioner’s or icing sugar. Cut the bars the size you want and serve. Keep these bars refrigerated in an airtight container for up to four days. Enjoy!
