Spinach Pie

This spinach pie recipe is made with Feta cheese. I use puff pastry dough for it but you can make your own pie dough or use Phyllo dough. If you do use Phyllo you will have Spanakopita.

This recipe is truly very easy and it does not require too many ingredients. It is great for a weeknight meal but also for brunch or breakfast. You can serve it at room temperature or warm. F you have any left overs send them to school or work in a lunch box. Delicious.

This is what you are going to need for this delish spinach and cheese pie:

Serves eight
2 puff pastry sheets
1 TBS olive oil
1 small onion – chopped
2 garlic cloves – minced
1 TBS all-purpose flour
10 oz. (283 grams) of spinach leaves
1 tsp. oregano
Black pepper
1 egg + another one for egg wash
8 oz. (227 grams) of crumbled Feta cheese or any other salty white cheese
¼ tsp. ground nutmeg
a splash of cream or milk for the egg wash
Grated Parmesan cheese and a little bit of paprika to sprinkle on top

Heat the oven to 375 degrees F (190 C).

Roll out a puff pastry sheet and line the inside of a 9-inch (23 centimeters) pie dish. Leave dough hanging on the sides and pierce the bottom of the dish with a fork.

Heat the oil in a deep skillet and add the onion. Cook for a few minutes until the onion is softened and translucent.

Add the garlic and mix well. Cook for about one minute until you can smell the garlic. Add the flour and mix well. Cook for about two minutes, stirring constantly. Add the spinach and mix it in carefully until it starts to wilt.

Add the oregano and some black pepper and mix. Make a well in the middle and add the egg. Let it sit for a little and scramble it. Mix it well and turn off the heat. Add the cheese and nutmeg and mix in well.

Fill the pie dish with the filling and cover it with the second piece of rolled puff pastry dough. Seal the dough together, leaving enough over hang to create an edge, and cut the excess off. Keep the remaining dough for future use.

Beat the egg in a small bowl and add the cream or milk. Beat in and brush the top of the pie with the wash. Pierce a few holes on the top with kitchen scissors and sprinkle with Parmesan cheese and then the paprika.

Place the pie in the oven and bake for 35 to 40 minutes until the dough is puffed and browned. Remove from oven and allow cooling for about 5 minutes and serve.
