Cheesecake Brownies

If you love brownies and cheesecake you are going to love this super easy and delish recipe for cheesecake brownies! The brownies are fudgy and chewy and the cheesecake soft and silky. Combined they are to die for!

This is a great recipe to make with the kids. It is fun and easy to follow. Just make sure to supervise them when they are melting the chocolate. You can also melt this in the microwave but be very careful not to burn it. Take it out every few minutes and stir until ready.

This is what you are going to need for this scrumptious cheesecake brownie recipe:

Makes 16 brownies

Heat your oven to 350° F (176° C).

In an 8 x 8 square pan place two pieces of parchment paper with some of the paper overlapping on the sides of the pan to make it easy to pull out. The parchment paper approach makes the cutting process a breeze, but If you do not have parchment paper do not worry as you can use foil or just cut the brownies inside the pan.

If you do not use paper or foil – butter the pan well on all sides. I put some butter on the parchment paper as well just to make sure I get perfect brownies.

FOR THE BROWNIES:

1/2 cup (115 grams) unsalted butter
3 oz. (90 grams) unsweetened chocolate
1 cup (225 grams) of sugar
1/2-teaspoon (2.5 ml) vanilla extract
a pinch of salt
2 large eggs at room temperature
2/3 cups (85 grams) of all-purpose flour

Place the butter and chocolate in a double boiler. Whisk until fully melted. Let cool for about 5 minutes.

Add the sugar to the semi cooled melted chocolate and mix well. Add vanilla extract, a pinch of salt, and two large eggs at room temperature and mix well. Add all-purpose flour. This does not require any baking powder or baking soda. Do not over beat just mix in well.

Pour the batter into the prepared pan and spread evenly with a spatula.

FOR THE CHEESECAKE:
8 oz. (225 grams) of very soft cream cheese
1/2 tsp. (2.5 ml) vanilla extract
1 large egg yolk at room temp
¼ cup (65 grams) of plain yogurt or sour cream.
1/3 cup (75 grams) of sugar

In a new bowl combine cream cheese, vanilla extract, egg yolk, and plain yogurt or sour cream. Whisk until nice and creamy. Add 1/3 cup of sugar and mix in well.

Place dollops of cream cheese across the brownie batter and swirl with a knife.

Place in the oven for 30-40 minutes.

At the 30-minute mark start checking the batter with a cake pin/ tooth pick/ knife. Once the pin/ pick/ knife comes out clean after being inserted into the batter then your brownies are done.

Once done baking pull pan out of oven and cool brownies on top of a rack. Cut the brownies into as many squares as you like and dig in!
