In this recipe I marinated the chicken in a citrus marinade for 24 hours. The marinade keeps the chicken breast extremely moist and tasty. This is a very low fat meal as I use chicken breast and a very little amount if oil to saute the vegetables. Enjoy!

This paella is loaded with chicken, sausage, clams and shrimp. Go ahead and add pork, mussels and lobster claws to it if you would like! This is a great dish for special occasions! Make sure you serve it with lemon wedges on the side! Enjoy!
