<p>This is a great alternative for a beef burger. I is also quite low in carbs. The sauce is made with Tahine, the main ingredient in hummus, and it complements the lamb very nicely. This is what you need to do for this:</p>
<p>1/2 pound ground lamb<br />
2 TBS finely chopped yellow onion<br />
1.5 TBS finely chopped mint<br />
2 TBS finely chopped parsley<br />
2 minced garlic cloves<br />
1 large lemon – some for the meat, some for the sauce<br />
Pinch cumin<br />
¼ tsp red chili flakes<br />
2 TBS Kefir cheese – 1 for the meat, 1 for the sauce<br />
½ cup crushed pita chips<br />
Salt &#038; Pepper<br />
½ TBS Tahine paste<br />
¼ tsp cayenne pepper<br />
Pita pockets<br />
Lettuce leaves, tomato slices, mint leaves and red onion slices<br />
Olive oil</p>
<p>Place the meat and the onion, mint, parsley and garlic on a bowl.  Add a squeeze of lemon juice, cumin, red chili flakes, 1 TBS Kefir cheese and pita chips. Season with salt and pepper and mix to combine well. Make three equal size patties.</p>
<p>Heat a large skillet with some olive oil. Add the patties and cook them until a nice brown crust forms. Flip them and finish cooking.<br />
While the meat is cooking, place the tahine in a bowl and this it out with about 1 TBS lemon juice. Add the remaining Kefir and form into a paste.<br />
Season with some salt and the cayenne. Set aside.</p>
<p>Cut a pita pocket in half and carefully separate it.  Smear the Tahine sauce in the inside. Line with lettuce leaves and add a cooked patty. Add a tomato slice, some mint leaves and red onion. Drizzle with olive oil and season with some salt. Serve.</p>

<p>Fried fish sandwiches are absolutely delicious and very easy to make at home.  We will be adding flavor to each coat so that your final result is delicious! Here is what you will need for this:</p>
<p><strong>Serves eight</strong></p>
<p>8 Tilapia &#8211; or any other mild white fish – fillets<br />
1 large lemon + 2 TBS lemon juice for sauce<br />
2 eggs<br />
1/8th cup milk<br />
1 tsp. prepared mustard<br />
¾ cup flour<br />
1 ½ tsp. white pepper<br />
½ cup bread crumbs<br />
½ cup cornmeal<br />
1 tsp. garlic powder<br />
1 tsp. paprika<br />
1 TBS chopped parsley<br />
1 cup mayonnaise<br />
1 TBS finely chopped red onion<br />
1 TBS chopped capers<br />
1 roll<br />
16 lettuce leaves<br />
16 tomato slices</p>
<ol>
<li>Rinse fish and place on a plate. Drizzle with lemon juice and season with a little salt. Set aside.</li>
<li>Place the eggs in a shallow dish. Beat them with the milk and the mustard. Set aside.</li>
<li>Place the flour in a shallow dish. Add ½ tsp. salt and ½ tsp. white pepper and mix. Set aside.</li>
<li>Place the bread crumbs and cornmeal in a shallow dish. Add the garlic powder, paprika, the remaining white pepper and the chopped parsley.</li>
<li>In a small bowl, mix together the mayonnaise, 2 TBS lemon juice, red onion, capers and pickles. Season with a little salt and white pepper and whisk it.</li>
<li>One by one, coat the fish fillets. First, dredge the fish in the flour, coat well and shake off the excess. Then, place it in the egg, coat well and shake off the excess. Finally, place it in the dish with the breadcrumbs, coat well on both sides and shake off the excess.</li>
<li>Heat a skillet with some olive oil. When it is hot, add the fish and allow it to brown &#8211; about 5 minutes. Flip it and finish cooking – making sure this side browns as well. Be careful not to burn the coating and make sure the fish is cooked through.</li>
<li>Cut the rolls in the middle but not all the way through. Smear spread on both pieces of bread. Place a lettuce leaf on both pieces of bread. Top the bottom leaves with the fried fish and a couple of tomato slices. Serve and enjoy!</li>

<p>Here is a delicious sandwich to make with corned beef.  You will need <a href="http://thefrugalchef.com/2011/05/braised-sauerkraut/" title="Sauerkraut" target="_blank">sauerkraut</a> for this. You can use store bought or make your own.  Sauerkraut is quite simple to make and is always tastier when made at home! This sandwich is traditionally made with rye bread.  I can not find rye bread in Bolivia so I am using a whole grain bread instead.</p>
<p>Here is what you are going to need for this:</p>
<p>Makes 1 sandwich<br />
2 slices rye bread<br />
1 TBS butter<br />

4 oz. corned beef<br />
2 TBS sauerkraut<br />
1 slice Swiss cheese</p>
<p>Butter one side of the bread and place it – butter side down – in a large skillet or griddle.  Smear each piece of bread with about 1 tsp. of dressing.<br />
Heat the corned beef and form it in the shape of the bread.  Top with the sauerkraut and cheese.  Use a bread loaf pan – or a grill dome – to cover the corned beef.  Cook for about 4 to 5 minutes, until it is warm and the cheese melts.<br />
Using a spatula, scoop the corned beef and place it on one of the pieces of bread.  Cover it with the other piece – grilled side up.<br />
Cut the sandwich in two with a sharp bread knife.  Serve and enjoy!</p>

<p>Here&#8217;s a nice way to dress up a common burger! You can use beef, chicken or turkey to make these patties.  You can also use my homemade blue cheese dressing or store bought. Whatever you decide it will be just fine! This is what you need to do for this:</p>
<p>1 pound ground beef, chicken or turkey<br />
Salt &#038; Pepper<br />
4 to 6 slices bacon or Pancetta<br />
4 tomato slices<br />
4 red onion rings<br />
4 lettuce leaves<br />
8 avocado slices<br />
Blue cheese dressing<br />
4 hamburger buns</p>
<p>•	Season ground beef with salt and pepper.  Form 4 even patties without over handling the beef.<br />
•	Heat a large griddle or skillet and cook the bacon.  Set crispy bacon aside.<br />
•	Lightly butter hamburger rolls and place on griddle.  Grill for a few minutes until uniformly browned. Remove from griddle/skillet and set aside.<br />
•	Place patty on skillet and cook for about 4 minutes &#8211; until brown crust forms at bottom. Flip and cook for another 4 to 5 minutes until patty is cooked through.<br />
•	Smear blue cheese on both grilled buns.  Place hamburger on bottom slice. Top with bacon, tomato, onion ring, avocado and lettuce. Cover with top grilled slice of bread and enjoy!</p>

<p>These little sliders are super easy to make and absolutely fantastic! You can use rotisserie chicken for these or simply cook your own chicken. I used one whole chicken breast which I boiled and shredded for this.  Depending on the size of your bread and the quantity you add to it you can get up to 10 sliders from this.  I also used my homemade bbq sauce with apple juice for these.  You can use your favorite store-bought kind if you prefer. This is what you need for these:</p>
<p><strong>8 sliders</strong></p>
<p>1 whole cooked &#8211; skinless, boneless chicken breast &#8211; about 1.5 pounds<br />
1 chipotle pepper in adobo &#8211; chopped<br />
1 cup bbq sauce + more for prepping sandwiches<br />
1/8th cup water<br />
8 small slices cheese of choice<br />
8 small burger buns<br />
8 tomato slices<br />
8 small lettuce leaves<br />
1 TBS olive oil</p>
<p>Heat oven to 350 degrees.</p>
<p>Add the oil to a large skillet. Heat it and add the chicken.  Add the chipotle and bbq sauce.  Mix well.  Add the water and cook &#8211; on very low heat &#8211; for about 15 minutes.</p>
<p>Cut the buns in half and place on a baking sheet.  Spoon chicken on the bottom part of the roll. Top with the cheese and place in oven.  Leave it in oven for about 5 to 6 minutes &#8211; until cheese is melted.  </p>
<p>Remove from oven and add some more bbq sauce on top bun.  Top the chicken with a tomato slice and lettuce leaf. Cover with remaining bun and serve. Enjoy!</p>

<p>This recipe is by far my favorite for pulled pork.  The combination of smoky chipotles with the citrus is to die for. YOu can make this in the Crock-Pot is you would like. Here is what you need to do for this:</p>
<p>1 – 5 pound pork butt<br />
1 medium onion – finely chopped<br />
2 garlic cloves – finely minced<br />
4 chipotle peppers in their adobo – chopped<br />
1 TBS cumin<br />
1 tsp. paprika<br />
1 TBS chili powder<br />
½ tsp. cayenne<br />
¾ cup cider vinegar<br />
¾ cup ketchup<br />
½ cup mustard<br />
1 TBS oregano<br />
2 TBS brown sugar<br />
2 cups tangerine or orange juice<br />
2 peels – white lining removed<br />
Olive oil<br />
Salt &#038; Pepper</p>
<p>Preheat oven to 325 degrees.  Heat a braising pan with some oil.</p>
<p>Trim the excess fat off the pork.  Season generously with salt and pepper.  Place in the hot pan and brown evenly on all sides.  Set aside.</p>
<p>Add a little more oil to the pan.  Add the onion and cook for 6 to 7 minutes until translucent and softened.  Scrape the bottom of the pan to get all the brown bits.  Add the garlic, chipotle, cumin, paprika, chili powder and cayenne.  Mix well and cook for a couple of minutes until fragrant.</p>
<p>Add the vinegar, ketchup, mustard, oregano, brown sugar and citrus juice.  Mix well.  Return the pork to the pan.  Add the citrus peels.  Bring pot to a boil, cover and place in oven.</p>
<p>Braise pork for 4 hours.  Remove from oven and allow sitting for a few minutes.  Cool down and shred.<br />
Place some shredded pork in a skillet with some BBQ sauce.  Heat through and place inside a sandwich roll.  Top with sliced pickles and serve.  Enjoy!</p>

<p>Grilled cheese sandwiches are easy to make and yet a wonderful meal.  These have tomatoes and basil in them and are scrumptious. Here is what you need to do:</p>
<p>Melt some butter in a large skillet.  Add two pieces of bread.  Top with some shredded cheese of your choice. Allow the cheese to melt for a little bit.</p>
<p>Top each piece of bread with 2 tomato slices and some chopped basil.  Add a second piece of cheese on top of the tomatoes. Cover it with a second piece of bread.</p>
<p>Carefully flip the sandwich.  Press down on it to help the bread brown and the cheese melt.  Add a little more butter to the pan.  Flip the sandwich a couple of times until the bread is grilled and the cheese is melted.</p>
<p>Remove the sandwiches from the pan.  Cut them on the bias and serve. Enjoy!</p>

<p>These little patties are so amazingly delicious you will want to make a large batch. Make sure you plan ahead as you will have to marinade the meat. These are a fantastically economical way to entertain! Here is what you are going to need for these:</p>
<p>3 pounds ground beef – preferably 80%<br />
3 garlic cloves – minced<br />
4 TBS chopped Italian parsley<br />
2 medium Roma tomatoes &#8211; halved<br />
½ a large white onion<br />
Red chili flakes<br />
2 cups shredded iceberg lettuce<br />
2 tomatoes – peeled and chopped<br />
1 small red onion – finely chopped<br />
Olive oil<br />
½ lemon juiced<br />
Plain yogurt<br />
Pita pockets – cut in half<br />
Salt &#038; Pepper</p>
<p>Place the meat in a large bowl.  Using a grating box, grate the tomato halves into the meat. Use the larger grating holes for the tomato.  Turn the grating box around and grate the onion on the smaller grating holes. Add the garlic and parsley.  Season generously with salt, pepper and red chili flakes.</p>
<p>Knead the meat for a good 20 minutes.  Cover it and refrigerate it.  Let the kneaded meat rest for a minimum of 4 hours or up to 24.  Form small patties, small enough to fit 3 in a half pita pocket. Grill patties in indirect heat on your grill.</p>
<p>While the patties are grilling mix the lettuce, tomato and red onion.  Season with lemon juice, olive oil and salt.  Set aside. </p>
<p>Place 3 cooked patties in half a pita pocket.  Top with lettuce salad, a dab of yogurt and extra red chili flakes.  Enjoy! </p>

<p>What meat eater do you know that doesn&#8217;t enjoy getting downright dirty with a juicy sloppy Joe? I know of none! Here&#8217;s a great and affordable recipe for this popular American meal! Here is what you are going to need for this:</p>
<p>4 Kaiser rolls<br />
1 pound ground beef<br />
1 medium white onion, finely chopped<br />
2 garlic cloves, minced<br />
1 large celery stalk, finely chopped<br />
½ cup ketchup<br />
¼ cup Worcestershire sauce<br />
1 cup beer – not dark ale<br />
2 teaspoons mustard<br />
4 teaspoons cider vinegar<br />
Olive oil<br />
Salt &#038; Pepper</p>
<p>Heat a large skillet with olive oil. Add the ground beef an season with salt and pepper.Brown meat, stirring occasionally. Drain out the fat.</p>
<p>Wipe down the skillet and add a little more olive oil. Add the onions, celery and garlic and cook for 4 to 5 minutes<br />
until vegetables are translucent.</p>
<p>Return the browned beef to the skillet and mix well. Cook for an additional 5 minutes. Add the beer, ketchup, mustard, Worcestershire sauce and vinegar. Mix well. Simmer for another 15 minutes in order for flavors to blend.</p>
<p>Spoon meat over half a roll and cover with the other half. Serve and enjoy!</p>

<p>Burgers are a very frugal way to feed the family.  This recipe mixes sausage with beef so the end result is absolutely perfect.  There are a few tricks to make the perfect, juicy burger.  This is what you need to do for 8 burgers:</p>
<p>3/4 pound ground beef<br />
3/4 pound Italian sausage &#8211; no casings, spicy or sweet<br />
3 scallions &#8211; white and light green, chopped<br />
4 garlic cloves<br />
1 tsp. Worcestershire sauce<br />
Black Pepper<br />
8 Hamburger Rolls<br />

Sliced Tomatoes<br />
Red Onion Rings<br />
Sliced Pickles<br />
Lettuce</p>
<p>Place all ingredients in a bowl and mix well.  Form patties and make an indentation in the middle.</p>
<p>Brush some olive oil on a skillet or griddle and heat it well.  Add the patties and cook them for about 5 minutes &#8211; until you can actually see they are cooked up to the middle.</p>
<p>Flip the patties and cook them for another 5 minutes. Make sure they are completely cooked through as they are made with pork and cannot be eaten medium rare.</p>
<p>Smear the bottom and top of a hamburger roll with some hamburger condiment. Place a lettuce leaf on the top roll.  Place a patty on the bottom one.  Top with tomato, onion and pickles.  Cover and enjoy!</p>
