Keto Mug Cake
Easy double chocolate keto chocolate cake in a mug.

What can you eat when you are dying for dessert and are on a keto diet? This! You can eat this easy and decadent keto chocolate cake. The beauty is that you will be able to make in in minutes and will be completely satisfied.

This keto chocolate cake is spongy and loaded in chocolate flavor. You will think you are sinning but you will not be! Best of both worlds.

You will need some special ingredients to keep this Keto. The first is almond flour. Almond flour is easily found at stores these days. You will also need a non-caloric sweetener. I used Lakanto Monk Fruit. I find that Monk fruit sweetener is the closest to sugar — in my opinion — with the least after taste. Of course, you can use any non-caloric sweetener that you prefer. Stevia is a good option as well. Finally, you will also need sugar free chocolate chips. Lilly’s has these in a lot of stores. I am adding some links for all of these products for you in case you want to get them from Amazon.

Keto Double Chocolate Mug Cake

2 tablespoons (28 grams) butter
1 egg
1 tablespoon (12 grams) Monk-fruit or Stevia
1/2 teaspoon (2.5 ml) vanilla extract
4 tablespoons (24 grams) almond flour
1/2 teaspoon (2.5 grams) baking powder
2 tablespoons (14.5 grams) dark, unsweetened cocoa powder
1 tablespoon (10 grams) sugar free, dark chocolate chips
Whipped cream (optional)
Raspberry or strawberry (optional)

Place the butter in a microwavable mug. Melt it for about 20 seconds.

Remove the mug from the microwave and add the egg, Monk-fruit and vanilla extract. Vigorously mix with a fork until it is all mixed in.

Add the almond flour, baking powder and cocoa powder. Again, mix vigorously with a fork until you have a smooth batter.

Add the chocolate chips and fold in.

Place the mug in the microwave for one minute.

Remove the mug and allow the cake to cool down. Add some whipped cream and a raspberry on top (optional). Enjoy!
