Vegan Chicken Salad with Jackfruit
Easy vegan chicken salad with jackfruit and avocado.

Jackfruit is a very good substitute for meat. It is very nutritious and inexpensive. It has the texture of meat without being spongy, like tofu. In this recipe, we are going to make a mock avocado chicken salad sandwich. We will shred the drained jackfruit, mix it with scallion, bell pepper and cilantro and then envelope it in avocado and vegan mayo. You will not believe how delicious this is. If you close your eyes you will think you are eating meat.

Jackfruit is an exotic and large fruit that grows in tropical areas. It can reach up to 80 pounds in weight! It is high in calcium, potassium and protein. It is high in antioxidants and in vitamin A and C. It also contains minerals. And, it is very budget friendly!

You can prepare Jackfruit in many ways. We used to serve it in a vegan BBQ sauce at our restaurant (ArepaTX in Dallas), inside a crisp arepa. This was very popular amongst our vegan customers. I think you will enjoy this recipe if you decide to make it!

We will be making this recipe with our homemade vegan mayo.

Vegan Chicken Salad with Jackfruit

Makes 4 sandwiches

1 can young jackfruit in brine (do not use jackfruit in syrup) — drained
2 tablespoons diced bell pepper
1 scallion — white, light green and dark green chopped
2 to 3 tablespoons chopped cilantro
1 avocado — halved
1/4 cup vegan mayonnaise
Black pepper to taste
8 slices bread of your choice
A handful of greens or a lettuce leaf — optional

Place the drained jackfruit in a bowl and shred it with your hands.

Add the bell pepper, scallion, cilantro, 1/2 avocado and mayo. Mix well with a fork, mashing the avocado. Add the black pepper and mix.

Place the prepared jackfruit onto one of the slices of bread.

Slice the remaining half of the avocado and add some slices on top of the jackfruit. Top with greens. Cover with the remaining slice of bread and cut in half on the diagonal.

Serve and enjoy!
