We are going to be marinating the shrimp for these tacos in a cilantro and serrano pepper sauce. The good news is that it only takes an hour and it is ready to be cooked. These are truly spectacular. The shrimp is juicy and super flavorful.

For the tacos we will make a tomatillo and avocado salsa as well as a cabbage and radish slaw. Once we have it all together you will love the explosion of fresh flavors in your mouth! Enjoy!

Marinated Shrimp Tacos

2 pounds shrimp — peeled and deveined

2 serrano peppers
1 bunch cilantro — washed
4 garlic cloves — peeled
2 scallions — trimmed (use the whole thing – white, light green and dark green)
1/4 cup water
1/4 cup white vinegar
1/4 cup oil (I used avocado oil)
1/4 teaspoon oregano

Place all of the ingredients in a blender and blend until smooth.

Place the shrimp in a glass or plastic container and pour the marinade on the shrimp. Mix to make sure it is all coated. Cover and refrigerate for one hour.

4 medium tomatillos – husked, washed and halved
1 jalapeño — seeded and membrane removed; halved
1 handful cilantro leaves with stems — washed
1 small garlic clove — peeled
1 1/2 small avocados — peeled
1/4 cup water
1 lime — juiced

Add all the ingredients in a blender and blend until smooth. Taste for salt and adjust if necessary. Set aside.

About 2 cups of finely sliced green cabbage
About 1/4 cup thinly sliced red onion
2 radishes – thinly sliced
1/4 cup chopped cilantro
1 lime — juiced

Place all the ingredients in a bowl and mix together. Set aside.

16 corn tortillas

Place a tortilla on a dry skillet and cover with a second one. Flip a few times. By warming them in twos you are allowing the middle to steam a bit and soften, while the outside get a little browned.

Double up your warm tortillas and smear with a layer of salsa. Place 4 shrimp on the tortilla and top with cabbage slaw.
